Cake Decorating

Important: All classes are from 7 to 9 in the evening, unless otherwise noted. Teacher is Julie Cancilla. “By George” teacher is George Plasencia

BASIC CAKE DECORATING
This class covers the basic principals of cake decorating. You will learn how to split, fill and frost a cake. Create borders, flowers and practice writing on cakes. Discover how creative you can be with frosting and a pastry bag.

Cost is $38.00 (Four classes per session.)
September 9, 11, 16, & 18

DESIGNER PRINTS
New item!! Edible prints to wrap around your cake add excitement and color.
Learn to use these great new decorating patterns. Each student will receive a cake to decorate and take home.

CUPCAKE FUN
Learn to make these delicious cupcakes, and decorate to make them extra special.
Each student will receive instructions, recipes, and at least 2 of each type of cupcake to work on, and take home. You will make the following;
Red Velvet with cream cheese frosting
Boston Cream with chocolate icing
Coconut with butter cream icing
Graham Cracker with peanut butter frosting
Cream Cake with apple strudel topping

PETIT FOURS by George
Students will make a variety of small cakes covered with white fondant.
Then learn to make some into animals and decorate some for the holidays.

INTERMEDIATE CAKE DECORATING
Perfect your skills and learn more types of borders, flowers and garlands.

Cost is $43.00 (Four classes per session.)
October 7, 9, 14, & 16

CREATIVE ICINGS by George
Learn to make three different types of icing (Buttercream, Whip Cream, and Chocolate Ganache) from scratch. Each student will have a cake to work on and choose 2 icings to work with. George will show you how to get that professional and expensive look on your cakes.

Wednesday, October 8th

GUMBALL CLASS
This class is a lot of fun! Students will learn to make animals (turtles, fish, puppies, and more) with gum balls and royal icing. Use your imagination to design some cute additions to your cakes and cupcakes.

Class is from 7 to 9 in the evening

Wednesday, October 15th

CREAM PUFFS by George
You will make cream puff batter, and then pipe out cream puffs and swans to bake and fill with whipped cream, custard, and chocolate mousse. You will also make some chocolate cream puffs.

CANDY CLASS
You will make 4 different chocolate truffles and some “spooky” molded candies just in time for Halloween. You will take home lots of candy to share with your family and friends.

COCOA 101
Learn all about cocoa! Taste the difference in the steps of Dutch Processing. You will make a Chocolate Angle Food Cake, 2 different Brownies, Red Velvet Cake, and roll Truffles in 2 types of cocoa.

FONDANT CLASS
Fondant is a very popular way to decorate cakes. You will learn to color, roll out and shape fondant. We will provide a baked cake for you to fill and practice your skills. At the end of the evening, you will take home your creation to show off and share with your family and friends.

FLOWER CLASS
Learn to make beautiful flowers (Roses, Daisies, Drop Flowers, Pansies, Petunias, and more), using Royal Icing and Fondant.

Tuesday, November 4th

MOUSSE CLASS by George
George will guide you in making different types of mousse from scratch.
Dark chocolate, Milk chocolate, and white chocolate will be used to fill a 3 layer mousse cake and some mousse cups. Students will take home what they make.

CAKE MIX MAGIC
In this class, you will learn to mix, bake, and properly fill a cake pan. Then Julie will share ideas on how to change a basic mix by adding different ingredients.

JACQUELINES COOKIE CLASSICS
This is a new teacher for the cake works. Her cookies are wonderful, and she has agreed to share some recipes with us. You will make and take home the following; chocolate overload cookies, tangy lemon tartlets, and Toffee butter bars.

TARTS by George
You will make Tarts using Fresh Fruit, Chilled Fruit, Custards, Chocolate Mousse, and Strawberry Mousse. Take home what you make as usual in our classes.

CINNAMON ROLLS & DANISH
In this class, you will learn to make, bake, taste, and take home, Julie’s famous Cinnamon Rolls, Butterhorns, and Fruit Pockets!

GUM PASTE FLOWERS
Learn how to make a Roses on wires and then make holly to decorate your Christmas cakes.

PIES by George
You will make a variety of your favorite delicious pies; Pecan, Pumpkin and Double Crust Apple!

Tuesday, November 18th

GINGERBREAD MANSION (NEW)
You will assemble a mansion, and decorate the inside. The next night you will decorate the outside and the yard. (All supplies are furnished EXCEPT for plastic items you may wish to add to your elegant mansion.) Note: This mansion is BIG! The base is either 26 inches round or 24 X 24 square---your choice. Make sure you have a way to transport it home!

November 19 & 20

ADULT GINGERBREAD HOUSE (Large 5 X 6 X 6 ½)
We will have a house baked and ready for you to decorate. (All supplies are furnished, except plastic items you may want to add to your dream house centerpiece.) This class is lots of fun and will put you in the holiday spirit.

ADVANCED FONDANT
This class will help you develop more skills in the art of fondant. Students will have their own cake to practice on. You will cover your cake in fondant, and then make poinsettias and holly to decorate for the holidays.

Tuesday December 2nd

BUTTER COOKIES by George
Our pastry chef, George, will again demonstrate how to make a basic butter cookie, and then show you how to flavor them with mocha and chocolate. Then you will pipe out rosettes, shells, sticks, and more! You will take home a nicely filled box of cookies that you decorated with chocolate or sprinkles to share with family and friends.

HOMEMADE CANDY FOR CHRISTMAS GIFTS
You will make Truffles, Peppermint Bark, Dipped and Decorated Pretzels, and Chocolate Dipped Spoons.

CHRISTMAS SUGAR COOKIES
These sugar cookies (Snowflakes, Santa’s, Snowmen and more) will be baked and waiting for you to decorate with royal icing, chocolate, crystal sugar, luster dust and fun sprinkles. Then you will make and bake “Swedish Blondes”. You will take home a nice assortment of all these cookies.

Tuesday December 9th

CHOCOLATE SLEIGH
You will be shown how to mold and assemble a chocolate sleigh. (We will have the pieces already molded for you). You will assemble and decorate your sleigh, fill it with cookies and candy and take it home.

Thursday December 11th

MOMMY OR DADDY AND ME (Large 5 X 6 X 6 ½)
One adult and one child will work on one gingerbread house together. House will be preassembled and ready for you to decorate. (All supplies are furnished, except plastic items you may wish to add). A fun class for parents and their children to bond! (And yes, it could even be a grandparent!)

Friday December 12th

CHRISTMAS CAKES
You will make, bake and decorate these fun and tasty cakes: Red Velvet Sponge Roll Cake; a Yule Log; and an Ice Cream Surprise Cake.

KIDS CLASSES

HAUNTED HOUSE (Large 5 X 6 X 6 ½)
Make a Spooky Haunted Gingerbread House! Black and purple icing, Halloween candy and your imagination will help you create your “monster house”. (All supplies are furnished except plastic items you may wish to add.)

Class is from 9:30 to 10:30 in the morning
Cost is $40.00

CINNAMON ROLLS AND MONKEY BREAD
Dough will be made up and ready for the kids to make and bake Cinnamon Rolls and Monkey Bread. These are fun treats to make and take home!

Class is from 10:30 am to 12:30 pm

HALLOWEEN CANDY
You will make: Spooky Candy Treats; Scary Suckers; Pumpkin Peanut Butter Cups

Class is from 10:30 am to 11:30 am

GINGERBREAD HOUSE (Small 3 ½ X 4 X 4 ¾)
This small house will be baked, assembled and ready for you to decorate. You will use Royal Icing, candy and lots of ideas to help you make your Holiday House. (All supplies are furnished except plastic items you may wish to add.)

Class is from 4:00 to 5:00 in the afternoon
